Acoustic guitar seems to get ignored in Prog but I can think of two mostly electric players whose acoustic work sold me easily (a secret Wink). Who do you fancy unplugged?

There are several that come to mind, that are good at acoustic work

Greg Lake
Helmut Koellen
Steve Hackett
Steve Howe
Wolfgang Schmid
John McLaughlin
Robert Fripp

You could probably guess from my avatar, my favourite would be Ant Phillips of Genesis. No other acoustic guitarists really come close for me...

Chris Fry of Magenta has released a solo album based around acoustic guitar and Magenta have done an unplugged album (with DVD). He is one of my favourite guitarists. I would also name check Stephen Caudel who is not exactly prolific but has recorded albums mainly based on acoustic guitar and also released an excellent album with Tim Panting. Probably the best classical acoustic guitar player to get involved in prog is John Williams of Sky. Check out Sky2 (soon to be re issued).

Same with me, micky,  but I don't know why Renbourn's discography is not listed in PA. His solo material like Sir John Alot seems pretty progressive to me, but I guess Jansch's song suite Avocet album appears more prog.

Akkerman, McLaughlin, DiMeola, Phillips, Towner, Hackett, Howe, Marcello Todaro, Corrado Rustici, Mussida, Oldfield, Fripp, Dunford, Serge Fiori, Tibbetts, Pat Metheny, and John Goodsall are the names that come up for me--with Akkerman and McLaughlin head and shoulders above the rest:  They had technical skill, blazing speed but most of all their play was always full of incredible emotional intensity--one raw and unbound (JA), the other as an expression of his perfect Zen presence (JM).

i am shocked that Ian Anderson had not got more mentions...i think he is one of the finest (or maybe was one of the finest) acoustic guitarists in any genre, inventive, distinctive voice, and just remarkable.
