I hope you don't mind that in Elevator, Ralph Towner plays solo at the Hammond B -3. This is actually the only time he played this instrument.
But his acoustic guitar solo what comes after the Hammond B-3 solo, that's magnificent.

I e always found that the title-track of Return To Forever's - The Romatic Warrior, an absolutely amazing example of Acoustic Jazz-Prog, if ever there was one.
Maybe not Prog, but Canada's Bruce Cockburn has created some fantastic acoustic pieces that could be considered Prog methinks.......
