I would suggest that they listen to my favourite opera recording first, Richard Strauss's Arabella conducted by Clemens Krauss in 1942.

Great question! 3 years ago , I got tickets to the magnificent Budapest Opera in order to introduce my two older children (Silvia 31 and Michael 29 at the time) to the "or you love it or hate it" style of music. On the programme, Bizet's Carmen which easily qualifies as the easiest to follow (they both speak fluent French). They were thunderstruck (no microphones, ornate interiors, stage setting) by the fact that they recognized 3 arias from the work. To paraphrase Julia Roberts "They almost peed their pants". LOL

I'm not a BIG fan really, but most of what I like of Opera comes from Italy. So, don't hesitate man, anything from there is a great suggestion to begin with. Puccini is a stunningly good starting point, I would suggest his Turandot as a first listening stage of this such a formidable "treasure map" that is the Opera.
 
Its very first performance was held at the Teatro alla Scala in Milan on 25 April 1926 and conducted by Arturo Toscanini, one of the most fantastic conductors ever!, below you can see him conducting.
