You should probably start with Nothingface and The Outer Limits. While I prefer Dimension Hatross and Killing Technology, they're a bit on the less accessible side.

Nothingface since it seems to be by far their most popular album, with Dimension Hätross a second place. Depends on your prior listening background, though: If you're more into "normal rock music" then start with Angel Rat or The Outer Limits. The two albums there are kind of outliers in being much less abrasive than the others.

To be 100% honest? I think the best place to start with Voivod is Killing Technology and then go backwards if you like the thrash/punk side of the band the most, or forwards in their discography if you like the avant-garde progressive side the most. Those early albums you probably need a working knowledge of punk to really "get", though, since at that point in their career the band's way of realizing the entire futuristic aesthetic is more informed by Amebix and Killing Joke than any prog rock group's way of approaching the same themes.
