Just recently got back into this album , and purchased the cd with an added 
documentary by Chris Squire
I found this documentary a fascinating insight into how the album was put together
bit by bit , like laying out the jigsaw
Does anybody know of an album from the 60's/70's whereby the artist(s) does a similar
type of recent documentary?

I don't know of any others, but I too revisited the album and found it amazing. The documentary might be worth updating my old Japanese import copy. Thanks for sharing.

It's very cool how he approached it, and no, I can't think of another artist who has done a commentary quite like that. There's the Classic Albums series, but that isn't as immediate as the artist actually sitting, listening, and telling stories as the music brings them to mind. 

I love this album. I lost a friend a little over a year ago, and I listened to Fish Out Of Water non-stop for about three months while I was working the whole thing out. It's one of the most charming and mature symphonic rock albums ever, IMO.
