Manfred Mann's Earth Band's version of Lane Tietgen's Captain Bobby Stout, but the live version not the studio rendition. They also covered another Tietgen song, Martha's Madman.

Stackridge - Hold Me Tight
Fairport Convention - Reynardine
Several Versions of Donovan's "Witch" song, and some of them were really far out.
The Clams - Close to You
Dream Theater/Queensryche - Who Are You (encore on their tour)
Roxy Music/Bryan Ferry -- many Dylan songs, and at least one Neil Young song
Manfred Mann's Earth Band - each album had a strong cover, in the early days usually Bob Dylan, and later Bruce Springsteen, Mike Heron and others.
Eleanor Rigby - If you like "Eleanor Rigby" by Esperanto, you really should give a listen to that song done by the Ides of March (Vehicle was a hit in the late 60's). Their 1st album with that and the hit, was an excellent album all around.
I always thought, however, that some of the versions of classical music by rock musicians, was far more progressive, than just some of the pop songs by someone else, albeit some versions are excellent. PFM, Focus, RAdeMusica, ELP and many others really pull off versions that make the classical pieces sound boring with an orchestra!

Thanks for posting that Beggar's Opera track. I don't think I've heard it before, but they make a good job of the quivery vocals, as well as making it progressive.
