Disclaimer: I'm fan of keyboards and cold to guitar music in general, especially all kinds of shredding and over-the-top soloing.
But what I enjoy is melodic, "singing" electric guitar, which is almost like human voice (and can serve as substitute for vocal lines in instrumental pieces). Not necessarily prog but Jeff Beck would made his guitar sing, as well as Clapton and Jimi ~

Edhels Oriental Christmas. I couldn't find any of it on YouTube. Lots of guitar spotlighted throughout. The solos have kind of a Hackett feeling with glorious sustained notes, and occasional Fripp sensibility at times too. The rest of the instrumentation is like a modern-day backing track, not inherently interesting on its own, but just functions as a platform for the guitar. There are some pieces from another album on YouTube, but I think Oriental Christmas targets what the OP is looking for a little better.

You are missing Riverside. Perhaps also Oldfield? But there it is more like the whole music sings, I guess.
