I'm intrigued by multi-instrumentalists who compose and record complete works all by themselves (with maybe a guest musician here and there).  Examples include:

Fabric of Reality (Rick Lambe) - symphonic
The Psychedelic Ensemble (name withheld) - symphonic
Synergy (Larry Fast) - symphonic
Ghosts of Pompeii (Joe Shingler) - eclectic
OHEAD (David Hendry) - electronic
Sayer (Sayer Seely) -  electronic

What are some other multi-instrumental artists (essentially one-man bands), and what genre characterizes them?

Anthony Phillips has a few albums by his own, with an occasional guest.

This seems pretty common in black metal for some reason. The Ruins of Beverast, Burzum, Gnaw Their Tongues, Spectral Lore, Falkenbach are the first ones that come to mind.

Ok...not to be pedantic but can one man actually be a band by definition...?
I think not.

Er....I think we all are guilty of that from time to time.

A one-man band is a musician who plays a number of instruments simultaneously using their hands, feet, limbs, and various mechanical and/or electronic contraptions. One man bands also often sing while they perform.

David Arkenstone and Andreas Vollenweider are more in the new-age-territory but play a multitude of instruments and have some great albums.

Also: Sally Oldfield (wich is a woman).

Wasn't Olias of Sunhillow entirely played by Jon Anderson himself?

Todd Rundgren on 3 sides of Something Anything.
I suppose you can add Roy Harper...after all one man bands shouldn't require a band while playing live.

No, I know how to behave in the restaurant now, I don't tear at the meat with my hands. If I've become a man of the world somehow, that's not necessarily to say I'm a worldly man.
