Iron Maiden (who are in Prog-Related) have covered at least a couple of prog songs - one of which is Jethro Tull's "Cross-Eyed Mary".

Phish played the whole Dark Side of the Moon album in concert. The vocals were dreadful. The instrumentals were fair to middling....

Jethro Tull works great for metal bands! Kiuas has a nice cover of Hunting Girl.

Northumbrian folk group The Unthanks have done covers of Robert Wyatt's Sea Song and King Crimson's Starless. The Wyatt cover is especially good.
