Having read a lot of great things about them, I'd like to get into some of their stuff. What would be a good place to start?

And can they really be appreciated if you're not religious? I read a lot about them being "celestial".

Einsjäger & Siebenjäger
Hosianna Mantra

My faves are:

Hosianna Mantra
Einsjager & Siebenjager
Letzte Tage - Letzte Nächte
Herz aus Glas - Coeur De Verre
Aguirre

I guess their sound is a bit "celestial", but no, I don't think any of their work is overly religious, but their is  definitely something spiritual about their sound.

Although I haven't been able to get much of their music, I really like what little I have heard. The song Aguirre from their soundtrack album for Herzog's film of the same name, is a sublime, ethereal masterpiece. Also the Songs of Peace are also really great, although I'm not sure what album they are on. As far as having to be religious to enjoy the music: not at all. You could call it 'spiritual' music if you wanted but it is only an adjective to describe the otherwordliness of their music.

Amazing, amazing, amazing is what they are.

Ive really been digging Bruder des Schattens-Sohn Des Lichts lately. It's more acoustically driven and just plain beautiful.

I think In Den Garten... is also a good place to start; it was my first album by Popol Vuh.

Re: religion, I think they're more spirtual and meditative than overtly religious, of course that's juts my take on it. It can defintely be enjoyed if you aren't religious at all.

Actually, I just remembered Seligpreissung (sp?), as mentioned in a previous post. That's probably the ideal place to start.

Superb band, and extremely original. I'd say their finest albums are "Hosianna Mantra" (1973), which is beautiful ethnic-tinged acoustic music with a spacy, ethereal edge, and "Sei Still, Wisse Ich Bin" (1981), which is their most ambitious album, with epic choral arrangements and a very eerie, unsettling feel.

Maybe you should consider the nprwegian band instead, they eleased three exellent albums. One as popul vuh, before they changed the name to popul ace.Of legal reasons ofcourse.I can recommend "stolen from time" from the deepest of my heart, its pure genius.

"Celestial" is an adjective which describe well their music which is more mystical and spiritual than religious.

Seligpresungal;ksjfa;lsjf is good, easy to get into, very smooth

Affenestundea;lkfjadsfj is really good too, nothing like Seligpresungdljfa;lkjf, not really even music, i mean it is and it isnt, but still enjoyable even if it is electronic balls bouncing, with sounds that mimic a chu chu train and walking

Clap I LOVE THIS GROUP!!!!!

I consider myself a VERY spritual person and have a deep faith so I can't objectively answer the second half there... but I will add that if their appeal was limited to ONLY those with a spritual inclanation I suspect their lasting impact would be rather limited.  I guess I project my own beliefs upon the music as opposed to having them imposed on me... if that makes any sense..   Get an album... it really is great music. Any of the suggestions you got will do the trick.

edit...

my favorite is Letze Tage - Letze Nachte  (but I'm a huge fan of Renate Knaup-Krotenschwanz who guested on the album)
