If you are interested in 70's Jazz/Fusion, I'll give you some recommendations for albums..:
- by Mahavishnu Orchestra: The Inner Mounting Flame, Birds of Fire
- by Return to Forever: Where Have I Known You Before, Romantic Warrior
- by Weather Report: Black Market, I Sing The Body Electric
 
Also, be sure to have a listen to Soft Machine, their third album is maybe a classic in that realm of prog.

Jean-Luc Ponty is really good Jazz Fusion. Enigmatic Ocean is a great album of his to start with. Mahavishnu Orchestra is awesome as well.

Jazz prog? Get Frank Zappa's Hot Rats... maybe more jazz than rock at times and God knows that else Frank threw in there, but it's still a pretty cool album.

Specific recommendation:
As far as French Canadian progressive rock goes, you can't beat the excellent Maneige's album Les Porches. Lots of jazz and classical stylings.

The 'obvious' progressive rock starter-set is, in my opinion, something like
Fragile or Close To The Edge - Yes
Nursery Cryme - Genesis (SEBTP is better, but it took me much longer to appreciate)
Thick As A Brick - Jethro Tull
In The Court Of The Crimson King - King Crimson
Emerson, Lake & Palmer - ELP
and Free Hand - Gentle Giant

If you like darker stuff, Van Der Graaf Generator's Godbluff is also vital.
