I was about to say Queensryche after listening to Rage for Order for the 1111000000101010100....th time but I would rather go for Shadow Gallery (brilliant melodies everywhere)

Pain of Salvation has some of the best melodies I've ever heard. Opeth and DT are close behind.

Same for me ! But I have even two better examples though they are not in the list, being Threshold and Vandenplas. Their melodies are usually even outstanding.
A day without prog is a wasted day

Although of all these bands PoS is my number one favorite at present, I vote for queensryche. None of these other bands can beat them in their prime. This Chris deGarmo guy really knows great melodies. 

Kevin Moore-era DT is not bad though.

Piotr Grudzinski's melodic guitar playing gives me goosebumps at times.

If we look purely at the melodic side of these bands I'd say Kamelot! Epica and the Black Hallo are great melodic metal albums.

I never considered porcupine tree as a metal band. Every now and then they play metal riffs but that's about it.

Definitely Shadow Gallery for me, and of course Fates Warning, because of the unforgettable sing alongs we had seeing them live many times in Greece.

Listening to Pain of Salvation makes me sad or depressed most of the time, so that's the least thing i need for hearing to something after 10 hours of work.

not delved in Vanden Plas so much yet, but definitely Threshold's melodies are top classClap
