I think Surf's Up is the greatest song that Brian Wilson ever wrote and would give Paul McCartney's Eleanor Rigby a run for it's money. If we're talking about a prog song written by a Pop artist then Elton's John's Funeral For a Friend would qualify here. Also have to agree that Whiter Shade of Pale is not only great pop, but also great prog.
