In mid-1969, ex-Yugoslavian & Belgrade's progressive rock band KORNI GRUPA was released 3-track EP which contains a song Sonata, and which is based on the same titled piece of music by Ludwig Van Beethoven.
Btw, in this video you can see a nice panorama of my hometown, Belgrade Smile

I like the quote of Holst's "Jupiter" Zappa put in his "Call Any Vegetable" suite.
He looks at this world and wants it all... so he strikes, like Thunderball!

Songs that quoted Bach’s “Jesu, Joy of Man’s Desiring”:

She Don’t Care About Time by the Byrds, also included in the cover version by the Cryan’ Shames.

Peter Banks added that familiar riff to Everydays.

An uptempo arrangement by a British studio outfit called Apollo 100 had a major hit with its version, titled Joy, in 1972.

Perhaps only proto-prog, but no one has yet mentioned Eric Carmen, "All By Myself," which includes a main portion of Rachmaninov's 3rd...

Actually, it was from his Piano Concerto No. 2; and the 2nd single from Carmen’s first album, Never Gonna Fall in Love Again, was based on a theme from Rachmaninoff’s Symphony No. 2.

Haven't checked all the posts, but surely RDM's Contamination is a strong contender for this thread, right (as its subject is Bach, some of his work assuredly is used [don't know for sure, though]? And Los Canarios uses VIVALDI's "Le Quattro Stagioni" to good results.

Thank you - I stand corrected.  And, I forgot about the other single from his first album...
