omg man, just google "best math rock bands" and listen to everything until you find something you like. That's pretty much the best way.

My band, Pseudo/Sentai sometimes calls ourselves Aftermath Rock because influenced by math rock but we fill our songs with apocalyptic tones and dont really change time sigs quite as much as math rock bands
 
 
Also, you should listen to Cervello from Italy, the early Italian Prog band. I like to say that Cervello invented math rock with their first album Haha

Never sure about where the boundaries lie between Math Rock, mathcore, skronk, etc but you might enjoy trioVD who have just released their second album, Maze.  I suspect they lie at the jazz rather than rock end but they're well worth a listen in any case.  Their drummer Chris Bussey is amazing.
