For Musique concrète : Pierre Schaeffer and Pierre Henry. Then, try the productions of the GRM (label: INA-GRM), like Michel Chion, François Bayle, Bernard Parmeggianni...

I don't have a very large John Zorn collection (so I'm interested in the replies here too), but the song/album that got me interested in him in the first place was "Spillane". We studied an excerpt of the title track in one of my college music classes, and I thought it was pretty wild. It's a 22 minute jump-cut collage (though Zorn points out that it's actually mostly played live!) based around the old fictional detective Mickey Spillane. Then another track (Two Lane Highway) is kind of a conceptual piece about the blues, featuring Albert Collins on guitar. Then the last track is composed for the Kronos Quartet, an abstract string piece called "Forbidden Fruit". Lots of variety there.
