And I'd rather extend it to a Top 10 list, adding just 5 of my fave FEMALE piano players (having to put aside a bunch of others equally great):
Martha Argerich Anne Fischer Nikita Magalof Hélène Grimauld Maria Joao Pires

For my tastes:
Hugh Banton Patrizio Fariselli Dave Stewart/ Keith Tippett Peter Hammill
Hammill's a bit of an odd pick, admittedly, but I think as a solo performer with voice his playing is so distinctive and fitting. Also very fond of Dr John's playing.
No love for Alan Gowan? The Canterbury crowd used to go 'round his house and find sheets of music he'd written but nobody could play....Gowan was a special talent, just not a very social one.
Joe Zawinul!
Bill Evans....I don't want to include non-fusion jazz guys, but Bill put out some albums where he played wild electric keyboards/Rhodes (Quintessence - a great album).
Keith Tippett.....man, that guy could get out there but still keep things hummable.
Carla Bley.....not on technique alone, but composition-wise there is no better IMO.
I like to feel the suspense when you're certain you know I am there.....
