I notice a strange pattern when I look at the cover of what I might consider to be my 3 favourite albums.

You see all 3 covers are pretty simple. A small centered logo with much of the background left unoccupied. Quite a contrast to a lot of extravagant Prog album covers a la Roger Dean.

What are some other examples of great albums with this style of simple artwork?

A couple of well-known post-rock albums, the former having probably one of my favorite pieces of cover art

Prog lounge or not, I think that someone will mention the Beatles' White album and even Spinal Tap's Black album.

Yep, I thought right.

Good topic! I usually tend to favour more detailed album covers, so it was actually a little difficult for me to find examples that fit, but I ended up coming up with a few that work if you don't mind a bit of writing on them.

Alas - S/T - Not what I'd necessarily call a "great" album, as per your original post, but it's a pretty decent ELP-like Argentinian release.

Arco Iris - Agitor Lucens V - Okay, this one I'd definitely consider a great album. And I think the cover still somewhat fits what you're describing.

Arco Iris - Arco Iris - More of a straightforward folk rock album than Agitor (if I remember correctly), but the cover is definitely minimalist enough to fit here.

Magma - MDK

Nucleus - Elastic Rock

Some of the covers from the Grateful Dead's Europe '72 series also use the same sort of design.

And let's not forget about the most famous example of all time!

Great thread!

Don't know if I'm really hitting the nail on the head with my picks, but here are a few covers I consider "minimalist."

And the last two that I'm not really sure about, but it won't hurt putting them here, I guess.

Tesseract - Altered State

Gary Burton Quartet - Picture This

Metronomy - The English Riviera

I feel like a fair number of releases on the Rune Grammaphon label would fit.

Especially Supersilent.

You could easily include here every cover from the ECM label, which has been defined by a haunting, minimalist aesthetic.
