I don't have a very large John Zorn collection (so I'm interested in the replies here too), but the song/album that got me interested in him in the first place was "Spillane". We studied an excerpt of the title track in one of my college music classes, and I thought it was pretty wild. It's a 22 minute jump-cut collage (though Zorn points out that it's actually mostly played live!) based around the old fictional detective Mickey Spillane. Then another track (Two Lane Highway) is kind of a conceptual piece about the blues, featuring Albert Collins on guitar. Then the last track is composed for the Kronos Quartet, an abstract string piece called "Forbidden Fruit".
