Depends on the mood. Typically, I'd put on anything that is not popular and/or frequently-talked-about:

A Saucerful of Secrets (the whole album), maybe "The Narrow Way" (parts 1 and 3), all of More, some of my favorite bootlegs like "Lucy Leave", "I'm a King Bee", etc.

Oh, under one hour?! OK:

I didn't really want to put anything from the really classic albums because i can't stand listening to just one song and not the whole album on those. although I still prefer to listen to a full album over one song at a time anyways in general

The absence of anything from DSOTM in my list is just because it is hard to strip a single part out of that album (except Money which i don't like that much).

Disc 1 of Ummagumma, the 3 middle tracks of Atom Heart Mother, and San Tropez.  Maybe cheat and go a tiny bit over to add See Emily Play or The Gnome or something else Syd.

An hour is way too short.
