Mice and Rats in the Loft by Jan Dukes de Grey :)

I've played the instrument myself! It's great.

If you like Bouzouki, you may like Oud. Add a touch of jazz and probably Rabih Abou Khalil is close to what you are looking for.

I stand with Roger Waters, I stand with Joan Baez, I stand with Victor Jara, I stand with Woody Guthrie. Music is revolution

Some Greek music has a real bluesy tinge to it that I really enjoy. Though it can indeed get a little boring depending on the playlist. I've been to Greece twice and heard a lot of local village bands play. I even have a bouzouki, though I can't remember how I came to acquire it.

So, on to the actual question. The only Prog I can think of is from the Avant sub-genre. On the third disc of Frank Zappa's Shut Up N' Play Yer Guitar box set, Zappa and Jean Luc Ponty do an extensive free-form improv with bouzouki and base violin. It's really precious. It's called Canard du Jour. I don't know why there isn't more bouzouki in Prog.

Oh my, I have that album. It never sunk in with me that there was bouzouki on there.

Try Irish bouzouki, such as played by Andy Irvine.  It's still not Prog but it's very different from the Greek music.

Fairport Convention, particularly with Maartin Allcock in the group. Every album from 1986 to 1996 had bouzouki (Dave Pegg has been know to play bouzouki as well).

I didn't realized that the OP ask for non-greek folky music (anyway I hope that somebody would like to hear Darnakes), so I'd like to reccomend this progressive masterpiece:  http://fernwood.bandcamp.com/album/sangita" rel="nofollow - http://fernwood.bandcamp.com/album/sangita

Sangita by Fernwood

Quote "As a listener I was kept enthralled, as each track opened new possibilities. An enchanting, beautiful and captivating aural pleasure."  Conclusion: 9 out of 10
DUTCH PROGRESSIVE ROCK PAGES (Holland)

"Solemn, progressive and crystal-clear produced world-music."
iO PAGES (Holland)

"Almeria is a breath of fresh air and is a welcome alternative to today's electronic and synth dominated music."
EXPOSE' Magazine

"Theirs is the kind of music one can sail away on. It swirls and flows in unexpected and delightful harmonies"
SACRED SOUND

"Progressive" in the purest sense of the term."
SEA OF TRANQUILITY

"It's cowboy, it's jazz, it's Oriental. Absolutely enchanting, a brilliant mix of interesting textures and layers of exotic acoustic timbers. A tantalizing taste of otherworldly aural delight."

Greek Bozuki is one of my favorite string instruments. It is often played very fast!
I had a luck to play in a greek rock/belly dance band who also featured some traditional repertoire when I lived in Scottsdale, AZ of all places!
I was so inspired by Yanni the Bozuki player in that band, that my guitar phrasing style changed for the better.

I made a quick search on the web, but I haven't found any Greek Bozuki Prog Rock music, unfortunately.

Having recently received their latest effort, Arcadia, I can heartily recommend Fernwood, one of Djam Karet's keyboardist Gayle Ellett's many side projects. Here's a link to their webpage: http://www.fernwoodmusicgroup.com/" rel="nofollow - http://www.fernwoodmusicgroup.com/ . Unfortunately, they are not on PA, and I think they many have been rejected in the past for not being prog enoughUnhappy. As you can see, they use a wide range of ethnic instruments made of wood, including the bouzouki.

Edit: Just realized that Svetonio had already mentioned Fernwood a few posts ago. Well done, sirClap!

Took a while before I noticed it.. the chords were way to strange for guitar I figured.

I can also warmly recommend Planxty's debut and the even better Cold Blow And The Rainy Night.

The instrument played in The third Man is a zither. It's multistring instrument that more like an autoharp. Below is a picture of a concert zither. And that's about all I know it this unusual instrument.

http://www.lastfm.fr/music/Dazkarieh" rel="nofollow - Dazkarieh is a prog folk band from Portugal whose first LPs were almost entirely reliant on the bouzouki. Although their registration at PA was refused, they are highly recommended to prog folk fans in general.
