How can one really know without seeing them before already? 
From what I've seen and are currently playing, here are the ones I'd consider essential:
Magma Gong Tortoise Jaga Jazzist The Mars Volta (can be awesome, can be not so awesome)

I like to watch youtube performance clips.
This list is subject to change, but these are the first that sprung to mind.
Magma Art Zoyd Univers Zero Present Aranis
In other words, ones you could see at a RIO festival.
I'd really love to see Robert Wyatt perform, but since you asked for a band....

From what I've seen/heard on various concert recordings (professional or not), on my wishlist the top ranking are:
Sigur Ros (apparently their break is not permanent) The Flaming Lips Koenjihyakkei Russian Circles Three Friends Battles etc.

Just 5? That's tough, that is. I'll stick to bands I've never seen live, though I'd love to see The Residents, Faust and Three Friends again. And Cardiacs, obviously, but that's not going to happen.

The Cardiacs? Hey, I've seen them. They were supporting Marillion on their Misplaced Childhood tour (I think it was that tour, mid-80s). The crowd absolutely hated them, they were booed and had beer and stuff thrown at them etc. Me? I thought they were great, miles better than Marillion who were really mediocre that night and were well onto their downward spiral by then. The song Is This The Life? by The Cardiacs remains a huge favourite of mine to this day.

Yeah, that support tour is legendary amongst Cardiacs fans. I can see how it wasn't a great match, but that's no excuse for the (reported) behaviour of some of the Marillion fans. Have you heard any of their later stuff? Tim Smith is the greatest composer of his generation, IMO, and I don't use those words lightly.

It goes without saying I'd love to see Pink Floyd again, but that's not going to happen now.
I count myself pretty fortunate in having seen most of my favourite artists either at their peak, or just before they hit the big-time. Last thing I want to endure is some band on their "greatest hits" tour.
Of the "old-timers" that I failed to see that I wish I'd seen:
- Curved Air (I have seen Sonja solo, Jobson with Roxy, Copeland with Da Police and Monkman with Sky - never seen Daryl Way play live which is a shame)
- Family (dunno why, but I never saw them)
- Gabriel with Genesis (seen solo Gabe and Genesis without him)
- Seventh Wave (they toured once and I missed them)
- The Sweet (most of the live recordings I've heard are actually pretty dire)
Oddly, three modern bands that I've missed for one reason or another that I really should try and see are:

the best 2 bands I've seen live were Russian Circles and Red Sparowes. ZPZ were also cool, as were Scale the Summit and Bigelf (that was PN '09). DT on the other, was lousy on that tour. They played all their crappy "hit" songs

Led Zeppelin (I wasn't born yet when they were a going live concern , so it will never happen)The Who (I actually saw them last year!  It was ace!) Porcupine Tree (saw them this year, and it was the best concert I've ever been to. Screw the haters) Iron Maiden (Missed out on them last time they toured down here in Australia, but they're coming down again soon) Black Sabbath (the original Ozzy line up. See my entry for Led Zep. Although, the guys are all still here. It can still happen!)

For me I'd have to say
Tool - Legendary performances, apparently. And, from what I've seen adn heard each member is even better live than in studio
Opeth - Just a really good metal show. Also every Opeth fan I've met IRL has been really cool and laid back.
Pink Floyd, WYWH or Animals era - If only 
Iron Maiden - Actually did see them live, they put on a hell of a performance even at their age.
Devin Townsend - guy is a crazy personality. And I'd love to hear the music live, without the wall-of-sound productio. I think it'd be just as heavy though

This is not an easy question.
At least 3 of the top composers of our time, will probably NEVER play in America ... because the interest is only in top ten, and the audience is too damn fickle to appreciate it ... and sometimes this board angers me because of it.
Vangelis (with orchestra of course)
Mike Oldfield (with orchestra of course)
Klaus Schulze
Riuichi Sakamoto (with orchestra and rock band together)
Riuichi has done stuff here with Yellow Magic Orchestra, however we will never get to see some of his solo work that is way better ... if you have not sat through "Beauty" and said to yourself ... I wanna see that ... and then listen to portions of "The Last Buddha" soundtrack ... and then to ... so much other stuff ... you are missing some really far out stuff. Totally neat and excellent.
Vangelis is without saying and you and I would both want "Blade Runner" for the encore. And I would like him to be with some orchestra folks, which unffortunately makes it more work for him.
Mike Oldfield ... cold day in hell that some a$$hole in NY is going to bring him to America for a couple of shows ... even with a rock band, however I don't think that Mike is interested in rock shows any more since the quality in most of them is from bad to pathetic and Mike will not allow that to happen to his music ... and since America is the ultimate place for cheap crap and plastic hit music ... it means we will never see Mike.
Klaus Schulze ... I think that he has given up and decided that places like America are simply not worth it ... on top of it, the desire to rewire all of his stuff and make it work would be a massive nightmare ... and not worth the hassle. He is also his own mixing person, which is something that some folks don't like ... and somehow I don't see Klaus just using 4 synths and a Midi board and nothing else to do what he does ... it's all or nothing!
After that ... there are no rock bands that I wish to see or regret not seeing except maybe Led Zeppelin. The best bootleg I ever heard was "Live on Blueberry Hill" by Led Zeppelin and the energy and intensity of the whole thing can not be found in many places at all.
I am not sure that there is any band I would want to see ... that I have not seen or that I missed otherwise. For the most part I am totally down on rock music concerts ... since not enough bands take care to ensure that their music comes out correctly and is balanced properly. My example here was the last two times that Ozric Tentacles came through here the sound system and mixing jerks screwed it up so bad that all you had was some idiotic rock'n'roll band out there that had no keyboards ... and sounded so bad ... that on the 2nd show I left halfway through it. It was just the saddest realization of my life that ... what we're calling "prog" is just crap and there are not enough people making sure their music is important at all ... it might sound fine on the mixing board, but that is NOT what people are hearing at all!
What made "progressive" was that these people cared about the music ... what is killing it and making it "metal" and some other form of crap definition, is that fidelity is not important and only loudness is ... ie .. .Dream Theater on their last tour! No keyboards or bass to speak of ... or singing voice for that matter! And in the end, this will kill the music ... and all that is left is people here on this board being a fan of a guitarist or drummer ... how progressive of them! ... see the point? ... it will kill the music!
Other than that, for the sake of music history ... I would love to see the orchestral Frank Zappa material regardless, and also his 200 Motels and other video stuff that is hidden released so we can see a brilliant and quite experimental mind at work.
Lastly ... I would like Congress to pass a law that any dispute between artist and record company is against the law and must be resolved within 30 days or the company will get punished for it, unless they can prove they are not the problem. This issue of movie companies and record companies holding artists for ransom has to stop and not be allowed. After all, we don't live in the age of slavery anymore ... or do we?

I have seen Gong and travelled with them for a bit and my pictures were used on a couple of tours ... Magma was in SF in 1999 in th eInternational Music Festival and they got a 15 minute ovation. Saw Hawkwind in 1974 on their Space Ritual Tour and then a year later with MAN on the Space 1999 tour. Both good, although the loudness at the smaller vnue later was painful. One nice side effect ... it was on that night that I first heard Caravan on the preshow music!
Peter and/or VdGG is one of those things that I would love to see, but I don't have to. I've had enough discussions and mails back and forth that I don't feel I need to see him ... and I have his music inside me all the time, and would prefer that the stuff I like be there, instead of something else.
All in all ... I am through with concerts ... I can enjoy Daevid in my house and he can just turn on my computer and play the midi board and come up with something, or he can just grab the accoustic and do the same thing, although I would rather we just do word play poetry and have some fun just flowing out ... or better yet ... I want him on the dock at midnight, next to the candles and enjoying a beautiful evening, resting and having fun ... and let him troll his heart and mouth out ... and after that we throw him into the lake for a baptism ... hehehe! In other words just to have fun. (we have waterfront property on a volcanic lake).
Being a writer and a creative person, the last thing I want to see is artists tied up ... and I'm finding that most of them in concert are ... plain and simple ... tied up and enslaved to our desires. And I hate to see that ...
Ohh another one ... I wanna invite Roy Harper over for some fun!
