Bossk are a good band - post metal, not rock though.

Tortoise (Millions Now Living Will Never Die and TNT), Mogwai (Happy Songs for Happy People and I love the Les Revennants soundtrack but that's in large part because I love the TV show), Sigur Ros' Agaetus Byrjun are my favourites.

Watching while most appreciating a sunset in the moment need not diminish all the glorious sunsets I observed before. It can be much like that with music for me; immersed in experiencing the moment.

There have been many good suggestions here (as far as I know them). Didn't see someone mention A Silver Mt Zion (and all their derivative names...). The singing on some tracks is an acquired taste, but after some time I acquired it and I personally prefer them over Godspeed You Black Emperor and over most of the other bands mentioned here. They may be a bit peculiar though to some...

Check out Scaphoid.  Kind of a mix between prog rock and post rock.

Though I've grown out of post-rock for the last five years (grown tired of itSleepy, a it's too repetitive or confined to its own space), two of the more original (as in inventive and inhabitual) were Tortoise and Sigur Ros.

The others I would cite would be GYBE! (and its offshoots), Do Say Make Think and Tarentel

I'm aware some will prefer vocals , so I'll point out Mogwaï and EitS

Great band, and I feel anyone interested in the genre should check them out. As Lewian said they are quite distinctive and don't fit into the post-rock “formula”, but the music is very rewarding (though requires a little patience).

The albums that are said to have kicked off the genre are the last two Talk Talk albums, Spirit of Eden and Laughing Stock, and Slint's Spiderland. I very warmly recommend all three. Bark Psychosis is another very early contributor to the genre, and very good. Tarentel's From Bone to Satellite is a classy album. I list all these having in mind some kind of similarity to the music of GYBE. Tortoise are in my view a core important post rock band, too, but their music is quite different in some respects.

I delved into post-rock around 2008-ish, listened for a few years intensely, but now rarely come back.
Records I enjoyed the most - aside from early (true) GY!BE - were:

The Evpatoria Report - Golevka (2005)
Yndi Halda - Enjoy Eternal Bliss (2006)
Neurosis - The Eye of Every Storm (2004)
Pelican - The Fire in Our Throats Will Beckon the Thaw (2005)

bold - most would consider these post-metal, Neurosis were kings of post-metal in those days. But try anyway!

Other huge names in post-rock at that time were: Explosions in the Sky, God is an Astronaut, Mogwai, A Silver Mt. Zion and maybe Red Sparowes. So if you wanna feel the zeitgeist of 2000s and explore post-rock the way most people did, these bands are exemplary... although not my favorite! Too often I felt they're building songs on a same formula, over and over again, it didn't look honest really. I called them crescendocore.

Godspeed You! Black Emperor is a good place to start. F♯ A♯ ∞ (pronounced "F-sharp, A-sharp, Infinity") or
 Lift Your Skinny Fists Like Antennas to Heaven are good albums to try out.

This one can best be described as Tom Waits meets David Gilmour while watching a Spaghetti Western...

I know about the instrumental ones like Godspeed you black emperor and I really like Swans' earlier material but I could never get into their later albums.
