Nice to see this poll got some participation and there are a few decent covers added.  My only quibble is that I was referencing covers by proggish band and many of the "other" answers were from non-proggish bands.  That being said it was really cool to see the Peter Gabriel cover...that was a song from him that I had never heard before.

I don't know if it's been mentioned, but Al DiMeola has an album of Beatles covers named "Across the Universe."

801 Live's amazing cover of "Tomorrow Never Knows"--though minor kudos go out to Peter Gabriel's 1976 cover of "Strawberry Fields Forever" from All This and World War II, Bono's "I'm the Walrus" and Eddie Izzard's "For the Benefit of Mr. Kite" both from Across the Universe, and The Dream Academy's version of John Lennon's "Love".

By the way, whatever do you guys think of the version of While my Guitar Gently Weeps by Tom Petty and Prince? I have seen posts of it on FB being considered a really outstanding guitar solo, but I just found it... nothing special, I much prefer the original (or the Eric Clapton versions)... now, I have only heard it once, though. I think there's even a reaction to that version by Doug.

AMAZING performance by Prince--so iconic! I love all the musicians smiling in awe as Prince goes on and on with his solo. It's the performance that led Eric Clapton to say in an interview that "Prince is the greatest guitarist ever." And I love (in typical Prince fashion) his toss of his guitar into the sky at the end--and the fact that it never comes down. Plus, Prince's playing is so dynamic, so smooth and intuitive (he claims to have never played the song before that performance), with no wasted notes. All the flash is pure God-given talent: he does it because he can.
