I'd love to contribute, after all, I'd like to hear other people's opinions so that I can expand my Hammond collection. In all honesty there's no way I could pick 10 songs - I'd have trouble narrowing down to 30 or 40 albums.

I don't know too much about the Hammond organ (I'm more familiar with the Hammond-Hammond), but I'll take a stab.
 
Deep Purple's Burn, uh, Minstrel in the Gallery? Of course, anything by Procol Harum.
