Easily Bill Bruford.  He's very interesting, does some great polyrhythmic beats and I don't think he's ever done a bad recording.

I say Mike Portnoy mainly because he keeps the crowd going, he stays on beat, his double bass technique is incredible, and his fills are also amazing plus i'm a
Dream Theater fan.
