I'd list the Passion Play or Thick as a Brick BUT those 2 are 1 long song for the whole album  :-)   
Same with wapassou - messe en ré mineur and Snow Goose by Camel  :-)

I went with All Of The Above. It was the track that got me back into prog after many years of not listening to it. I also discovered Spock's Beard, The Flower Kings and Neal Morse's solo stuff because of it.

I agree that we can change from day to day.  I primarily put this up to there to learn about some new ones  :-)

For now, I went with SuperNova by Gracious.  The last few minutes with the pastoral harmony vocals (aka Beach Boys Pet Sounds) and mellotron build up takes me to another world.

Although I have other personal favorites there's plenty of amazing ones too choose from:

Btw I don't often think about side long prog suites but I do think Earth and Fire's Song of the Marching Children is extremely overlooked on that regard. And in would fit nicely in this selection.

As much as I love Zarathustra (and a handful more) I feel boring as its really between three out of four of the biggies: Lizard, Echoes or Plague... but whichever I prefer depends on my mood and the season.

I chose Bubu. But my real answer (this evening) is Maneige's Le Rafiot - to my mind one of the greatest pieces in the progosphere, and quite hors categorie.
