My alltime favorite instramental is The Boys In The Band. Altho from your list I choose Zappa.

I'm running still, I shall until, one day, I hope that I'll arrive
Warning: Listening to jazz excessively can cause a laxative effect.

Hocus Pocus Wins my vote.

Still, my favourite instrumental has to be 'Crucis - Los Delirios del Mariscal'

Interstellar Overdrive got my vote.

No Rush, eh? In that case I'll go with Tubular Bells.
And I am not frightened of dying, any time will do, I
don't mind. Why should I be frightened of dying?
There's no reason for it, you've gotta go sometime.
I never said I was frightened of dying.

Liquid Tension Experiment- When the Water Breaks is my all time favorite instrumental.

I voted for Zeppelin. "Moby Dick" is a classic instrumental and nothing beats it when its played live for well over 20 minutes (especially on the DVD.)

One likes to believe
In the freedom of music
But glittering prizes
And endless Compromises
Shatter the illusion
Of integrity

I would vote for Hocus Pocus from this list, but it's far from being complete (if it was meant to be so) without Genesis, Jethro Tull, Dream Theater and ELP instrumentals...

My all-time favorite instrumental is definately Dance Of Eternity by DT. despite what about a jillion crtitcs of the track might say, I absolutely love it, especially the 20-second bass solo at about 3 minutes in.
Who you gonna call?
