My appreciation of such projects depend on whether I like the original music and the actual orchestral arrangement.  At worst, it could become muzak, but at best it can become a thing of beauty.  I have compared Prog music to Classical on many occasions and these projects are a place where that crossover is most apparent.  The only sample I listened to was the original one posted and I really dug the rendition of Tarkus.  That's sort of full circle, isn't it?  I mean because ELP clearly was influenced by Classical and did many of their own renditions of Classical pieces.  And there is a reason why Symphonic Prog is called symphonic.  It's not the same as orchestral, but the line can easily be blurred.
The world of sound is certainly capable of infinite variety and, were our sense developed, of infinite extensions. -- George Santayana, "The Sense of Beauty"
