While listening to Billie Holiday, I was reminded of how much I love the instrument and was hoping someone could recommend something that features it prominently.

Univers Zero is the first one that springs to mind. I also believe Art Zoyd had some bassoon parts, although I am not entirely sure.

Was just listening to "Ruins" from Henry Cow's Unrest the other day and was really struck by how much key noise there was from Lindsay Cooper's bassoon. It was almost like a little extra percussion!

I was just going to say that everything with Lindsay Cooper onboard is outstanding, maybe with an exception of Comus' second album. She was an excellent musician with a distinct style and feel. I think she also appeared on Steve Hillage's solo debut Fish Rising.
