I almost put Zappa as the poster child for this topic...

I mean, apart from the ones I mentioned earlier, there is Bongo Fury (all original), Best Band/Jazz Noise (full of covers & novelty tunes), and Yellow Shark (mostly orchestral live renditions of classics, but has its share of avant-garde craziness).

Tinseltown is in the same school as Sheik: live recorded backing tracks being dubbed upon by guitar, vocals, etc

The first-ever non-English rock opera, Croatian "Gubec-beg" (English: "Gubec the Bey") by Ivica Krajač (librettist), Karlo Metikoš (composer), and Miljenko Prohaska (arranger), was inspired by the peasant revolt in Croatia in the 16th century as a true event.
All the tracks on the "Gubec-Beg" album (1975) are actually the live recorded segments of the original stage performance featuring 200 musicians in total in Zagreb's Komedija Theatre in spring 1975. 
This is "Ave Maria," also a live recorded song from the "Gubec-Beg" album, performed by Croatian singer Josipa Lisac, who played the character of mad lady Jana, and here she sings this prayer-like song in Latin.

Phish , the prolific Vermont University's combo has issued tons of live material/improv' .Lot are previously unreleased pieces of music.

The double album "The Köln Concert" features some of the most memorable piano melodies ever brought by Keith Jarrett, derived from improvisational material. Concert promoter Vera Brandes, who organised the event where this famous ECM album was recorded, was only 18 years old at the time.
