Jazz: Jacques Loussier - Play Bach
Classical:Vivaldi - The Four Seasons (many fantastic recordings of this)
Blues: John Lee Hooker - any album
Reggae: Bob Marley - Legend
R&B: Stevie Wonder - Innervisions
Opera: Puccini - La Traviata
Heavy Metal: Krokus - Stayed Awake All Night
Folk: Steeleye Span - All Around My Hat
 
As per usual, these are all off the top of my head - as I have many favourites from each of the above genres.
