Had a couple perfectly poached eggs over toasted English muffins, inspired by Snowie's thread. They were fabulous.  I tried a couple of new tricks I read about.

One, add a bit of vinegar to the water which helps keep the white from spreading.  Two, drop one mason jar ring for each egg into the bottom of your shallow water.  When it comes time to slip your egg into the water, do it over the ring.  This sizes the egg about perfectly for an English muffin. 

In any case, I'll be going poached from now on.  Great meal.
