I'd probably suggest starting out with either Blues for Allah (for a jazz rock/prog fan) or Anthem of the Sun if that guy/girl was into psychedelic 60s music.   Common wisdom says that live albums (of which there are many) are the way to go with this band, but I disagree - especially since the latest issues of these studio albums are jam packed (ha ha) with live bonus tracks that give a nice representative sample of the band live around the time of the album.  Blues for Allah is actually an exception to this rule, though; the band was on hiatus from touring in '75-'76, so instead there are rehearsal/demo improvisations which are also quite adventurous.

Blues For Allah
AoxomoxoA
Anthem Of The Sun
Terrapin Station
These 4 albums are where I'd steer a fan of Prog. They display elements of psych, experimental/avant-garde, jazz-fusion, symphonic, improv. etc.

I guess if depends what "kind" of GD you're looking for, as they made different kinds of albums.  In my book "American Beauty" is the best album they ever made by a damn long shot, but it's not the "trippy" Dead that everyone expects.  It's a songs based album of road music, with acoustic jams and good vocal harmonies.  Hunter/Garcia songwriting at its peak.

I agree...that might be their 'best' album when it comes to song writing.
My personal favorite is  Axomoxoa.

Mars Hotel has its share of interesting tracks - particularly Unbroken Chain.
Wake Of The Flood is a lovely, laid-back kinda album, quite rustic and very tasteful.

I agree, with Workingman's Dead coming in second. Other than that, not a big Dead fan. If I want extended jamming, I'd much rather listen to The Allman Brothers.

Agreed with everything you said here. If you want three albums to know what the Dead is all about, I suggest American Beauty, AoxomoxoA, and Blues For Allah.

Aoxomoxoa and American Beauty. Both, they both display different sides of the Dead and are solid albums in my opinion. I do love both the trippy side of the Dead as much as I love the more folk and country side. Blues for Allah could be another good option, more proggy in nature.

Whats so great about the Dead is that they are so varied  and diverse in their output but so identifiably 'The Grateful Dead' throughout.. i'd recommend looking at some of the extremely well documented live work.. after all the Dead Heads always said 'there aint nothing like a Grateful Dead gig!'.. Europe 72 and the relatively recently released Europe 72 volume 2; 'One from the vault' which showcases 'Blues for Allah' in 75 and then 'Alexandra palace 74 Dick's Picks vol 7 and the Sunshine Daydream, Veneta, Oregon 72..
Whats the most 'prog' GD?.. probably the side-long track 'Terrapin Station'. What they do live with 'Dark star' and 'Playing in the band' is mind-bending!Thumbs Up

I couldn't stop after reading that you couldn't stop .
Man, I had 3 too many last night - I can't even recall why I would post this random nonsense. Sometimes, I just don't get me ......
Now here's a no-nonsense statement to make up for my Tom-foolery - Phil Lesh is a WICKED bassist
The song called St. Stephen is a gem. And be sure to get the original mix of AoxomoxoA - the way it should be.
