Crustified Dibbs (now known as RA the Rugged Man)
King Gordy (not quite experimental but friggin awesome anyway)
 
Also look at the Definitive Jux label (run by El-P)
 
Your best bet is to find your favorite experimental hip-hop artists then check out everyone on their label.

Loudly seconding the recommendation of MF Doom. Look out for the various albums he's put out under other pseudonyms too - King Geedorah, Madvillain, Dangerdoom, Viktor Vaughn, he's put out good material under all those identities.

Gnarls Barkley are an interesting experimental hip-hop outfit which you might enjoy; Cee-Lo Green is the singer there and as you probably know from his solo material he tends to sing rather than rap which gives the music a bit more of a melodic edge than a lot of rap.
