In no particular order, and with many more waiting in the wings:
Yes - Gates of Delirium
Genesis - Supper's Ready
Genesis - Cinema Show
Manfred Mann's Earth Band - Martha's Madman - especially the live versions
Van Der Graaf Generator - A Plague Of Lighthouse Keepers
Yes - Awaken
King Crimson - Lizard
Pink Floyd - Echoes
Camel - Unevensong
Banco del Mutuo Soccorso - Metamorfosi
Pretty obvious "classic" selection... but then I am an old fart...

I don't really have ten all-time favourites, and
my favourites du jour change, well, pretty much daily as I'm exposed to
new-to-me music.... I know far too little prog to come up with a really ultimate
list. Currently I'm totally hung-up on Le Orme... Still, I'll try, and this is kind of
arbitrary and in no particular order..
Le Orme - Maggio
Focus - Hamburger Concerto
Camel - La Princesse Perdue
Anglagard - Jordrok
Gentle Giant - Experience
Gryphon - Midnight Mushrumps
Caravan - Nine Feet Underground
ELP - Trilogy
Yes - Heart of the Sunrise
Genesis - Firth of Fifth

Watching while most appreciating a sunset in the moment need not diminish all the glorious sunsets I have observed before. It can be much like that with music for me.

Oooo, really hard to choose. I suppose a top ten prog songs changes almost daily for most of the readers here. Anyways, here's some classics (in my mind ) mixed with some more recent stuff i've been into:
1.) Porcupine Tree - The Sky Moves Sideways (full 34-minute version)
2.) The Flower Kings - The Truth Will Set You Free
3.) Tool - 10,000 Days
4.) Dream Theater - A Change of Seasons
5.) Yes - Close to the Edge (obviously)
6.) King Crimson - Starless
7.) The Mars Volta - Cassandra Geminii
8.) Symphony X - The Odyssey
9.) Jethro Tull - Thick as a Brick Part I
10.) Coheed and Cambria - The Willing Well II
As you can see, the list is OF COURSE dominated by epics, as they seem to be able to clearly define every aspect of the band playing it. This thread asks for a seemingly impossible answer...I had to leave off Pink Floyd, Pain of Salvation, Spock's Beard, Genesis, Opeth, The Tangent, Sigur Ros, etc etc....
Besides, most prog bands write ALBUMS, not SONGS

I'd choose "Sea Song", my favourite...with the great RS on bass... BTW, it's way too tough to think about 10 ultimate prog tracks. There are far too many I love, and I agree with many of Rocktopus's choices. Maybe later I'll find my inspiration...

In the sunlight, see - it flashes
Find a fly and eat his eye
But don't believe in me
