You've stumped me a bit by not allowing live albums. Otherwise Seconds Out and Paris would be in there.
The Lamb is a possibility, as is Quadraphenia and Goodbye Yellow Brick Road. The Wall is a must. I suppose the White Album would be in there as well.

although it should be noted, two of these while released as double LP sets. now each fit onto a single sub-80 minute CD (BTW Zappa's Joes Garage was originally issued as single and a double LP set - so really formatted as a treble).

I've just got hold of Chicago Transit Authority and Chicago II on CD.Both sound good on first few listens.A case for inclusion in progarchives?!

No live or compilations albums? That knocks out a pile of classic releases. In fact, Zappa, Magma and King Crimson put out most of their best work on live albums. Oh well ...

I found it surprisingly tough to come up with five great double albums, but these would certainly merit inclusion on my desert island list:
Led Zeppelin - Physical Graffiti: Not just a double, but also my fave Zep album overall. So much BANG for your buck on there! First one I thought of.
Who - Quadrophenia: This last truly great album from my fave R&R outfit saw me into my teenage years. A must on my list.
Genesis - The Lamb Lies Down on Broadway: Of course! Though perhaps not my favourite, it's great, and I'll need some of my top prog band for my exile.
Wilco - Being There: These guys are perhaps my favourite American group today, in any category, and this one is very solid and varied, even if not my overall fave. More people should check them out -- try "A Ghost is Born" and "Summer Teeth," please!
Beatles - White Album: May as well bring some of the most important band ever, and there's lots of essential stuff on here!
Other than live albums & compilations, I can't think of a sixth "must have" double. 
Nice variation on the old concept, BTW chessman!

For me...
666- Aphrodite's Child (fantastic- truly superb album which deserves much more attention than it gets- nothing else sounds quite like it)
Third- Soft Machine (another unique album that I love)
Yeti- Amon Duul II (love the long warped guitar workouts on this album)
The Lamb Lies Down...-Genesis (well actually I must be in a minority in slightly prefering the second half of this- some of Genesis' very best work)
TFTO- Yes (a classic imo- not the folly its reputation suggests and I love it)
