haven't listened to The Mars Volta in years What's "Choirs"?

This was tough, In Absentia or Train of Thought. I picked Train of Thought, probably my favorite DT album and doesn't get the love it deserves.

First vote for Happy the Man. A unique, largely overlooked, and mostly instrumental album with very tight musicianship and performances. Runners Up include Peter Gabriel, Spock's Beard, Transatlantic, and IQ.
