Cogs in Cogs by Gentle Giant. Deceptively difficult vocal song, what with the unusual syncopation and all.

Montana by Frank Zappa. Give the backup singers a relative challenge, for once!

Either Machine Messiah, Close to the Edge (Even just Total Mass Retain), We Have Heaven, or Parallels by Yes. All very lovely vocal workouts.
