Transatlantic have also covered Magical Mystery Tour, Strawberry Fields, I Need You (Beatles/America) and Soul Sacrifice. There's also the Yellow Matter Custard Beatles' cover album.

I finally managed to listen to all these songs. Good selection! Thumbs Up
From the list I like the Brian Eno/Phil Manzanera (801) version of 'Tomorrow Never Knows' most.
Though, if 'other' were an option, I still would have voted for the already mentioned Father of Night, Father of Day from Manfred Mann's Earth Band.

I´ve never heard about "3" before, but as I could judge from their profile on this site, this is less significant project only for hard ELP- fans. I´m sorry but Golden Earrings´ 19 min. version of Eight Miles High is simply invincible!

Every Little Thing. They simply transformed a simple Rock song into a great progressive song. Surely the best on that controversial album !

Mine would be Yellow Raven, Pain of Salvation's cover of the song by Scorpions.

From the list, it's gotta be the Yes version of Every Little Thing. I absolutely adore the first Yes album (I'm in the minority), and their take on the Beatles classic is magical.

Voted for The Nice - She Belongs To Me. Emerson chucks in a bit of The Magnificient Seven as well.
 
MMEB's version of Blinded By The Light is also superb although it has to be the album version with Mann's very clever use of the piano refrain 'chopsticks'.
 
One not on the list is Lone Star's excellent version of The Beatles - She Said She Said
