Hiromi is the obvious call as is the Esbjorn Svenssen Trio (EST), e.g. Strange Place For Snow.  Brad Mehldau choice of covers (e.g. Lennon & McCartney, Nick Drake) on a  number of his solo  albums may delight. But dig around, the old stagers such as Chick Corea or Herbie Hancock (e.g. New Standards) might appeal.
 
One of the godfathers of nu.fusion, Bugge Wesseltoft has a new album with Hendrik Schwartz, Duo, which seems to push the boundaries of nu.fusion withreal time, lap top treatement by Schwartz of Wesseltoft largely  playing acoustic piano (which may or may not be "treated" itself)>

I love The Bad Plus up til they added vocals, and Mouse On The Keys. Anything else out there in the same genre?

Same with HYpnotic Brass Ensemble, I'd love to have more music along those lines
